Pongal Recipe




Ingredients for the slurry:
Rice                                                                                        -              1 cup
Moong Dal / Green Gram / Pesara papu                -              ¾ cup
Water                                                                                   -              3 ¾ cup
Turmeric powder / pasupu                                          -              1 tea spoon
Salt to taste
Cook all the above ingredients in a pressure cooker for 4-5 whistles to get the slurry for our pongali.
Now, you can choose to mash the mixture or just leave it as it is before you add the seasoning.
Ingredients for the seasoning:
Ghee                                                                                     -              2 tablespoon
Red chilly / endu mirapakayalu                                  -              3-4
Pepper corns                                                                     -              11-12
Curry leaves / karivepaku                                             -              2-3 twigs of leaves
Jeera / cumin / jeelakarra                                            -              2 tea spoons
Ginger / allam                                                                    -              about 1 table spoon ( peeled and chopped  )
Green chillies                                                                     -              1-2 finely chopped
Kaaju / Cashew / jeedi pappu    ( optional )
Heat the ghee and add all the above spices and fry them for about 1 minute or till they are done.
Once it is done , pour this over the slurry and mix it properly and there we have, our pongali J
Serve it hot.
It is very eeeeasy, ain’t it !!. Pongali is also a very healthy dish as the main ingredient here is green gram.

Coming to the making of Raita,
Ingredients:
chopped onion
chopped  green chillies
grated carrot
chopped  cucumber
chopped tomato
chopped  cilantro
Salt to taste
Curd
Just mix all the above ingredients to get the raita.
Raita need not be served with Pongali. It is an optional thing, but better go for it as it adds to the taste.
