Jeera Rice


One of the simplest of all the flavoured rices.

Ingredients:
Plain Rice / Basmati rice                 -              1 cup
Jeera / Cumin seeds                       -              1 tablespoon (as is)
Bay leaves                                           -              1-2
Green Chillies                                    -              2 (chopped)
Onions                                                  -              1-2 (depending on the size)
Salt                                                         -              1 tablespoon
Oil                                                           -              1.5-2 tablespoon
Water
Method:
Wash the rice and soak the rice for about 20-25 minutes before we start with the preparation.
Take a tawa (or any large thick bottomed vessel , as we will be cooking the rice in the same). Heat the oil and add cumin seeds, once you see them popping, add green chillies bay leaf. After 10-15 seconds, add 2 cups of water. Add salt to this water. Once it comes to a boil, add the soaked rice (after draining the water) and cook it on a medium flame.
As the rice is getting cooked, why don’t we slice the onions. Deep fry these sliced onions in oil until they are golden brown and crispy.
When the rice is almost cooked (like 95%). Spread the fried onions (also optionally some food color) over the rice in the tawa and cook it with a closed lid on a very low flame for another 5-10 minutes.

After this, the dish is ready to be served. It can act as a side dish for any veg or non-veg curryies.
Kadi pakhora is the first one which comes to my mind when you say jeera rice.
